Brock Lesnar is currently working on a 417-day title run as WWE Universal Champion. That is quite an impressive number - although, the guy hasn't really had to defend his title that much given his part-time status in the organization. It's possible we don't see him put that belt on the line again for at least another couple months.

Ringside News is reporting that Brian Alverez responded to a question during Wrestling Observer Live, about when we might see Lesnar in the ring and wrestling again. He discussed the fact that The Beast wasn't going to be at Money In the Bank. And given the guy's part-time work schedule - and the big money payed to him in his new contract - the WWE would probably want to save his next title defense for the second biggest show of the year, SummerSlam (this year set for August 19th):

"He is not on Money In The Bank so my guess is when they first announced that he had re-signed a deal I did have someone tell me they believed he was going to be there through SummerSlam. So all we know is that it is a short-term deal. I presume he is going to drop the title at SummerSlam I don’t know what. It could happen I guess in July. But he is not at Money In The Bank so it will either be the July pay-per-view or SummerSlam and if you got Brock Lesnar and you’re paying him big money it will probably end up being SummerSlam."

At this point it is speculation, as we don't know the exact details of Lesnar's new deal with the WWE. And obviously, we will see Lesnar on TV before then so that he can start building the feud with whoever they decide to put him up against. But as far as an actual wrestling match - it is possible that we have to wait three months to see Brock back in the ring as his reign could make it past 500 days without him even having to show up.
